These frozen fish cakes are made with Alaskan pollock, which is a member of the cod family and is rich in omega-3 fatty acids. They’re lightly breaded and seasoned with Old Bay, salt, lemon, pepper, red onion, garlic and cilantro. They can be cooked straight from frozen for a quick and easy dinner, or they can be defrosted and marinated for an extra-special lunch or dinner.
To prepare the fish cakes, first thaw them in a bowl of water for 2-3 minutes. While the fish cakes are thawing, prepare the vegetables by slicing the onions and julienning the carrots. Add a tablespoon of oil to a pan and saute the sliced vegetables over medium heat for a few minutes until they are translucent and aromatic.
When the thawed fish cakes are ready, place them in the same pan and cook over medium-high heat until they are golden brown on both sides. If you’re cooking the fish cakes from frozen, this will take about 2 minutes per side. Serve with a dipping sauce and some steamed veggies or a light green salad.
